Chef Marcos Spaziani impressed Below Deck Sailing Yacht viewers with his amazing meals, and fans can now try his food at his new restaurant Marlou. Charter guests pay a boatload of money for the Parsifal III sailing experience, and fine dining is one of the main attractions. Along with top-quality service, the food is the main determinant of the crew tip at the end of a charter. When the crew obtains the guests’ preference sheet, it is up to the chief stew and chef to make sure they have everything they ask for.
When guests are unhappy with the quality of the food, they are quick to let the staff know. Below Deck Sailing Yacht season 3 charter guest Erica Rose’s husband Charles Sanders went on a rampage over his omelet, yelling about how there were tomatoes in it. However, Marcos just calmly took it in stride and knew that there was no pleasing some people. Another group of charter guests requested a ten-course dinner for eight guests. Marcos was a bit taken aback at having to make eighty plates of food by himself, but he was able to pull it off and wowed the guests.
Marcos’ fans can now taste his food at his restaurant Marlou, which is located in downtown Los Angeles, California. Marcos opened the restaurant with fellow chef Louis Huh, who has competed on Food Network. The two chefs have worked together before and created ML Eats, which offers private chef events, catering, and a food truck. Their food became so popular that Marcos and Louis decided to open a brick-and-mortar restaurant. Marcos, who is from Venezuela, combined his love of South-American cuisine with Louis’ Korean background, creating a delectable fusion menu. Marlou serves brunch and dinner and has a curated cocktail list.
Marlou’s grand opening was in February 2022, and Marcos’ Below Deck Sailing Yacht castmates visited him in March. First officer Gary King, chief stew Daisy Kelliher, stew Kelsie Goglia, and chief engineer Colin MacRae all celebrated with Marcos in Los Angeles. Online reviews praise Marlou as being “magnificent” and love how Marcos and Louis combine their “culinary and cultural backgrounds to create an extraordinary menu.” Their brunch menu offers items like ceviche tostada, and a spicy pork bulgogi sandwich with a bottomless mimosa option. Dinner can be small plates like smoked beef carpaccio and tiradito, or “shareables” like a 16 oz. ribeye steak.

So far, Marcos has gotten rave reviews, and Captain Glenn Shephard can’t be more pleased with the chef. With his laid-back personality and ability to create one-of-a-kind meals for charter guests, Marcos has been one of the best and likable chefs in the Below Deck franchise.
