After completing his diploma, Gagan started training with the Taj Mahal Group. After leaving Taj Group, he started his own catering company in Kolkata, but his company failed. He then started providing home delivery services in Tollygunge area. In 2003, he started working in the cafeteria of a telecom company in Kolkata. In 2007, he began working with a restaurant called “Red”. This restaurant specializes in Indian cuisine. In November 2010, Gaggan opened his own restaurant called “Gaggan”. He was inspired by Rajesh Kewalramani, who met Gaggan in Spain in 2009 and liked his cooking style.
His restaurant “Gaggan” is included in the “World’s 50 Best Restaurants”. Gagan was also the first Indian to work with Ferran Adrià on ElBulli’s research team. In 2014, “Gaggan” ranked 17th in the world. It became Thailand’s best restaurant in 2015, 2016 and 2017, and appeared on the Asia’s 50 Best Restaurants list and won awards.
It ranked 10th, 23rd, 7th and 4th on the World’s 50 Best Restaurants list in 2015, 2016, 2017 and 2019 respectively. It is the only Indian restaurant to make the top 50 list. In 2016, Gaggan was featured in Season 2, Episode 6 of “Chef’s Table” on Netflix. On July 23, 2019, he left the restaurant after an argument with his partner. Later, he opened his own restaurant named “Gaggan Anand” in Bangkok on November 1, 2019. In 2021, his restaurant was ranked fifth on Asia’s 50 Best Restaurants. In 2020, Gaggan announced plans to close the restaurant and open a 10-person restaurant in Japan that would be open on weekends. He also opened two other restaurants – Meatlicious and Sühring.

I worked with chefs in Europe and followed them as they elevated the world of fine dining, starting with Ferran Adria, who showed me that the whole world was getting into this heightened, interesting dining culture. My mom always said “don’t play with your food” but that’s what we want to do now. This is a taboo. Asia had just opened its doors to a new world of dining and luckily we were in the right place at the right time so we jumped at the opportunity. “

The problem in India is that we think the customer is always right. The chef will modify the dishes according to the guests’ preferences. We are so spoiled. The real reason I left India was that no one believed it, but today I am not afraid to say that I ran away from my first wife. She was my first love and we have been together since 1998. I ran away from her because I had no love left after 7 years of marital toxicity and although it was fun, I gave her a second chance and we lived in Thailand together in 2007-2008. She is the most abusive person I have ever met.. mentally ill or maybe I have always thought I was not good enough… We are legally separated and I have forgiven her but the scars are still there.. Such is life, a lot of the time , relationships happen, love happens, things change Today love is healing I have love and happiness because I believe in love and rebellion in life.
