You might picture a lot of meat when you think of Greek and Greek Cypriot cuisine. Georgina Hayden acknowledges, “There are just so many kebabs, and we adore a grill. “That is probably a justified preconception.”
She is particularly interested in learning more about the plant-based foods consumed during fasting seasons like Lent. And fasting is practised for up to 200 days annually, including the 50 days leading up to Christmas and Easter, as well as every Wednesday and Friday.
Hayden observes, “If you’re doing it right, that’s a lot of days without meat.” But that means that when you do eat meat, they are tough; balance is key.
Hayden, who spent 12 years working with Jamie Oliver, has devoted her most recent cookbook to nistisima, which is “a Greek word that means Lenten food,” according to Hayden. “It’s the cuisine we consume before any significant religious occasion.
That is the overall definition, but if you were given anything that was “nistisimo” or food that was “nistisima,” it basically just implies that it is plant-based. Despite the fact that it does contain shellfish, Hayden’s book is totally vegan “for the sake of ease”.
The religious allusions and vegan diet may make it seem intimidating, but that is not at all Hayden’s intention. Her goal is to “empower people with a load of recipes that introduce more lentils and vegetables to their life” rather than to “tell people what to do.” She is not vegan herself and wouldn’t urge anyone to adopt a wholly plant-based diet if they didn’t want to.
Furthermore, neither vegan cheese nor sad meat substitutes are mentioned in the book. Hayden even admits that vegan feta was “honestly the most disgusting thing I’ve ever eaten” after trying it once (“I was curious!”). Instead, she discovered that numerous local foods from Cyprus and its neighbouring nations are unintentionally vegan and completely delectable on their own.
