Jenny Rosenstrach's 'Cheater Sheet-Pan' Tomato and Corn Pizza Gets Dinner on the Table in 25 Minutes

When she can’t find a meal that delights everyone in her family, Jenny Rosenstrach turns to pizza.

“If you’re looking for a dinner that will please everyone, pizza is almost always the answer,” says the author On weekdays, vegetarians become simple cook. Her 25-minute tomato and corn pizza recipe “delivers on every level.”

“During the week, I can’t be bothered with a pizza stone and making my own dough. This recipe relies on store-bought dough and a cheat technique that gets dinner on the table quickly,” says Rosenstrach.

Her method involves placing a ball of dough in the center of a greased pan and using your fingers to stretch it to the corners. No rolling pins, floured surface or throwing dough in the air.

“It’s easy to add ingredients to any particular corner to satisfy kids who may have strong opinions about what they do and don’t want on their pie,” she adds.

3 tablespoons extra virgin olive oil, divided

1 (16 oz.) ball fresh store-bought pizza dough, at room temperature

8 oz. fresh mozzarella, pulled or cut into pieces

1½ cups cherry tomatoes, halved

1 cup of fresh corn kernels

½ cup of thinly sliced ​​red onion (from 1 small onion)

⅛ teaspoon garlic salt

Kosher salt

Freshly ground black pepper

Freshly torn fresh basil, to serve

1. Preheat oven to 450°. Grease an 18×13-inch baking pan with 2 tablespoons olive oil. Place a ball of dough in the middle of the bowl, press and stretch it with your fingers so that it reaches the edges. If the dough does not stretch, leave it for a few minutes and try again.

2. Scatter the mozzarella over the dough, leaving a 1-inch border around the edges. Sprinkle with tomatoes, corn and red onion. Mix salt with garlic and remaining 1 tablespoon olive oil in a small bowl; spread the mixture around the edge of the pizza dough. Sprinkle everything with salt and pepper.

3. Bake in the preheated oven until the cheese bubbles and the crust turns golden-brown, 15 to 20 minutes. Remove from the oven and sprinkle with basil before serving.
