On BBC2’s Great British Menu, the North Staffordshire chef was congratulated for creating a “brilliant meal”.

“I thought the black garlic, apple and date ketchup was great. The genius of the dish was that you couldn’t tell it was made from plants if you ate it with your eyes closed.”
