On BBC2’s Great British Menu, the North Staffordshire chef was congratulated for creating a “brilliant meal”.
Cheddleton The Flintlock restaurant owner Tom Bateman hopes one of his delicious dishes will be included in the final feast. He’s one of four chefs from the Midwest who had to prepare canapés, an appetizer, and a fish dish in tonight’s episode.
An animated and illustrated celebration of Paddington Bear’s 65th birthday is this year’s main theme. Thom, a TikTok sensation, admitted on the show that he went straight to the kitchen after school and has since posted several home cooking videos on social media.
At the height of the coronavirus pandemic, Thom started The Flintlock “I immediately got into cooking after graduation because I always wanted to be a chef. Everything in my kitchen is influenced by nostalgia; it turns a memory into an encounter on a plate.” As a chef, I have embraced social media. I consider myself an outsider because I lack the depth of experience that many others have.
The meal contained a lot of celery, but was shrouded in secrecy, informing Judge Paul Ainsworth that “it’s a secret”. It featured roasted celery stuffed with caramelized celery puree, potato “skin” and black garlic, apple and date ketchup.
The food was created to look like a dragon egg and even had burning embers on it that gave the dish an incredible look. The other contestants gave it high scores, a total of 9 out of 10. “Dragonology” also scored well from judge Paul, who praised the presentation and the beautifully grilled celeriac, but said the potato skins needed more crunchy.
“I thought the black garlic, apple and date ketchup was great. The genius of the dish was that you couldn’t tell it was made from plants if you ate it with your eyes closed.”
