She always wanted to be an actor. Anjali graduated in Mass Communication and worked as an assistant producer at Never Ending Story (a famous production house). In an interview, while talking about her journey to becoming an actor, she said,
So, I went on to study Mass Communications and worked as an assistant producer at an advertising production company hoping to get an acting job one day. But eventually, I realised that wasn’t how it worked and that you just had to audition. So, I quit my job and began a vicious cycle of cold calling, auditioning, successes and failures. Today, I’ve been working in the industry for five years and I’ve been lucky enough to work on digital sketches, commercials, web series, short films and now, Scam 1992 for Sony Liv. I feel lucky because I’m not only living my dream but my mother’s dream as well.”
In 2018, Anjali was nominated by Mukesh Chhabra to act in a Bollywood film but it didn’t happen. A year later, she was chosen by Mukesh Chhabra to act in Hansal Mehta’s web series Scam 1992: The Harshad Mehta Story. The series is about Harshad Mehta, the mastermind behind India’s biggest financial scam. She was offered the role of Jyoti Mehta (Harshad Mehta’s wife) alongside Pratik Gandhi who played Harshad Mehta. The series went on to become one of the best web series in India and boosted Anjali’s career.

Anjali often appears in comedy sketches on Scoopwhoop and Filtercopy. Apart from Scam 1992, she also plays the role of a 15-year-old school girl in another web series called Wrong Number.
Anjali has shot numerous commercials for brands like Yamaha, Godrej, Amazon, HDFC, Paytm, Big Bazaar and Clean & Dry.
Anjali shot and starred in a short film titled O Maa. She shot this film during the COVID-19 lockdown.

- Anjali decided at the age of seven that she wanted to be an actor, but according to her, she didn’t have enough confidence to share the idea with anyone. In an interview, when asked where her passion for acting came from, she said,
I inherited this dream from my mother. She always had a dream to pursue acting, but she couldn’t do anything about it. There were many factors in that era, such as resources, knowing the right people, and even just having the guts to try, which was a difficult task. But she always had a dream to see herself on screen, and among the many things I have to thank her for, this is one of the things I learned from her. I knew from a very young age that I wanted to be an actor, and I couldn’t imagine myself doing anything else.”
