Christina Tosi Shares Her ‘No. 1 Baking Tip’ — the Tester Cookie

The secret to Christine Tosi’s perfect batch of cookies isn’t expensive baking tools or fancy techniques she learned in pastry school — it’s a “test cookie.”

After you make the dough, but before you bake the entire batch, Tosi suggests removing one cookie onto a tray and placing it in the oven.

“I think a lot of people go to the oven and then there’s all this chatter in your head like, ‘Oh my God, did I do it right? Is it going to turn out?'” the Milk Bar founder tells PEOPLE at an event celebrating the latest LG- evi kitchen appliances. “It feels like you’re following a recipe and then everything goes in the oven, and then you’re on reality TV where you’re crossing your fingers and toes, staring at the oven and going, ‘I hope it turns out, I hope it turns out, I hope that it will turn out.'”

The cookie tester takes the guesswork out of baking. “A cookie tester tells you, ‘Are there hot spots or cold spots in my oven? Is this time and temperature right for my oven?'” says Tosi. “Developing this great relationship with your oven is really important. It will change the way you think about baking and your confidence level.”

If you don’t like one cookie, you can customize it – without spending a lot of dough.

“You start learning to think first, ‘Oh, I actually like a little more golden brown,'” he says Baking club Author. “Either ‘I was hoping it would be taller, so now I’m going to raise it a little bit,’ or ‘I actually want it to spread out more.’ Okay, let it cool a little more before you put it in the oven ‘I wanted more chocolate chips in it…'” he adds, pausing.

During the event at its flagship Milk Bar location, Tosi demonstrated LG items such as the LG Smart Top Control 1-Hour Dishwasher and the LG InstaView Refrigerator with MyColor. (The refrigerator door window illuminates in one of five vivid color options so you can see what’s in the refrigerator without opening the door.)

“I’m a mom, I’m a baker, I’m everything. I feel like LG is bugging my home,” she tells PEOPLE.

Her children — Frankie, 3, and Sonny, 1, who she shares with her husband, restaurateur Will Guidaro — are there with her every day, baking.

“Our home revolves around the kitchen. They help, pull up a chair. ‘I want to cut an apple. I want this. I want that. What about this? Can I add this? Open the fridge. Knock on the window,'” mimics Tosi. “They freaking love it.” .”

She calls motherhood “one of the most challenging roles in life” — but also one of the “most creatively powerful roles.”

“They reactivate parts of my imagination that even spending time in the company of other brilliant creative people at Milk Bar doesn’t touch,” adds Tosi. “It’s been a brilliant, humbling ride of life, and I’m so excited to see who they go on to become.”
