Damola Adamolekun News
In an interview with Restaurant Business Senior Editor Joseph Guszkowski on Tuesday at the Restaurant Leadership Conference, Adamolekun said, “The brand was still as powerful as I recalled. “The food was still of good quality.”
However, Adamolekun claimed that the dine-in experience was subpar and that P.F. Chang’s off-premise business accounted for a pitiful 18% of revenues at the 200-unit chain.
Adamolekun is a partner of Paulson & Co., the investment firm that partnered with TriArtisan Capital Advisors to acquire P.F. Chang’s from private equity firm Centerbridge Partners for $700 million in early 2019.
The experience around the dinner was lacking, he claimed. “The lighting was overly strong. There was no music at all. the design? “Beige central,” he declared.
He claimed that rather than being seen as an opportunity, delivery and to-go orders were seen as a hassle. Thus, Adamolekun and the P.F. Chang’s team fought to bring the company around in the year before the epidemic.
They decorated the dining room with splashes of colour. “Good design doesn’t have to be expensive,” he declared.) Bye-bye Asian Mac & Cheese! They also explored ways to eliminate menu items that didn’t mesh with the brand’s personality while also creating some eye-catching, immersive menu items. “You can’t just put ‘Asian’ in front of the name,” Adamolekun remarked.
Off-premise sales at P.F. Chang’s transformed from a minor revenue stream to a significant one. Data from Technomic, a sister company of Restaurant Business, on the Top 500 chains shows that the chain’s sales increased by 31.7% in 2021 compared to the previous year.
In order to concentrate on delivery in populated urban areas where it could be prohibitively expensive to construct a full-sized bistro, the firm established its P.F. Chang’s To Go branch. Currently, the company has roughly a dozen of the fast-casual, small-footprint shops across the nation, but Adamolekun claimed he sees room for up to 1,000 of them.
90 of the brand’s full-service sites now offer self-delivery, but the owner said he has no plans to totally abandon third-party delivery services. Because tips are kept on-site, he claimed that restaurant teams prefer the self-delivery model.
He does, however, continue to hold steadfast to his lack of enthusiasm when it comes to ghost kitchens. P.F. Chang’s won’t be opening any delivery-only restaurants, unfortunately. “We get a lot of walk-in business,” Adamolekun claimed. “You lose maybe half your sales from people walking in when you don’t have that front of house,” the merchant said.
