After completing her studies, Gayatri Joshi started her career as a video jockey for Channel V in India. In 1999, Gayatri participated in the Miss India Female competition. She was one of the top five contestants on the show.

She also appeared in a Hyundai car commercial alongside Shah Rukh Khan. She appeared in Indian music videos for Jagjit Singh’s Kaghaz Ki Kashti and Hans Raj Hans’ Jhanjaria.
In 2001, Gayatri Joshi modeled for seasonal catalogs and calendars. In December 2004, she made her acting debut opposite Shah Rukh Khan in Ashutosh Gowarikar’s film Swades. The film was well received by Indian critics but failed to do well at the box office.

- In October 2023, Gayatri and her husband Vikas Oberoi met with an accident in Italy. They were reportedly traveling in Sardinia in their Lamborghini when a Ferrari hit their car and a camper van. Gayatri and Vikas survived the accident; however, another couple from Zurich, Switzerland, Markus Krautli and Melissa Krautliin, were camping Death in car. Vikas reportedly later faced charges of dual-way homicide under Italian law.
