“I actually thought about it. A good friend of mine said, ‘Plan your first day after. Plan it because it will help you.’ So I’ve already come up with my own little idea,” Kotb, 60, tells PEOPLE while at the Miraval Austin location for her “Making Space: A Wellness Weekend” event, where attendees could participate in a variety of classes and sessions that encouraged self-improvement. .

“There’s a 5:30 SoulCycle class in my town. I’ll go to mine at 5:30. So I’m used to getting up at 3:00. So I sleep in,” she continues. “I’m going to go to SoulCycle at 5:30. I’m going to finish at 6:30. I’m going to come home. I’m going to feed my kids breakfast. I’m going to go get a cup of hot coffee. I’m going to go to school with them, which is going to be one of the most amazing things.”

Upon returning home, Kotb will get down to business. “I’m working in the wellness space. That’s going to be my new thing. I’m working on an app, and vacations and stuff. It’s all going to be nutritional stuff. So I’ll be working a few hours,” she shares, which recently included her event that lasted weekend in Austin, where celebrity journalist and philanthropist Maria Shriver and businesswoman Jamie Kern Lima were among the featured guest speakers.

“And then I’ll have a meaningful lunch with great conversation with people I haven’t been able to sit down and visit with,” she says. “I don’t remember the last time I ate lunch. You know what I mean? Over the past, however many years. So I’m going to sit down, eat lunch. I’m going to do some more work, and at 3:00 I’m going to pick up my kids and I’m going to take them home or take them to their activities.”

Hoda Kotb teases her surprise next project after Today Leaving — and not in journalism (Exclusive)

On September 26, Kotb announced her plans to leave her longtime role at Today. He will remain in his position until the beginning of 2025.

But Kotb won’t be leaving NBC entirely, as she notes that the plan is still being “formulated.”

“It will include some specials, a podcast and maybe the Olympics, things like that,” Creating space the podcast host explains. “It’s going to be like that kind of thing. So it’s going to be specials and all that stuff. And I think every month or so I’m going to come back to Today show and do a little something in this space, which I think will be fun.”
