Tap “Chat settings”, tap “Unpin chat” and the chat will be immediately unpinned from the app. It remains visible to all your other chats; it is no longer pinned to the top of the screen. Also, the person on the other end of the conversation doesn’t know when you pinned/unpinned them from the Snapchat app.
