Inver restaurant co-owners Pam Brunton and Rob Latimer sit in the kitchen of their home, surrounded by floor-to-ceiling windows that frame a landscape of land, lakes, and rolling hills. Pam begins to describe their joint quest to open a restaurant on Loch Fyne, on the west coast of Scotland, with a cup of coffee in both hands. Rob oversees the restaurant while Pam cooks while she works and Inver is only minutes away.
Two Scotsmen met in London. Rob the entertainer and Pam the cook liked to consume both. As her careers developed, Pam began to travel and spent a year working in an old nut mill in southwestern France. This experience shaped her and Rob’s idea for a future restaurant. Locals delivered baskets of mushrooms and raspberries that were still warm from the sun to the back door, she recalls. “This is what I wanted if I was going to open my own restaurant. Not only products, but also interpersonal relationships.
The couple’s desire for education and experience led them to the stage first at Nom in Copenhagen and then at Magnus Nilsson’s restaurant Faviken in Sweden. They were drawn to the similarities between the geographic and cultural climates of Scandinavia and Scotland. Both properties were at the epicenter of the ‘new Nordic food movement’ and it was here that Rob developed critical expertise in stylish and modern restaurants.
Pam took a break from cooking after working in a restaurant kitchen for almost ten years to pursue a master’s degree in sustainable food systems. She says it helped her better understand how to behave and make decisions for herself according to her ideas. It gave her a way to express the ideas and ideals that she held, she adds. She gestured to the view out the window. “In my opinion, an ecosystem includes both the natural environment and the human ecology. I think the consequences of what you do are immediately visible when you are so close to the water, the slope and the environment.
