The Bear Is Coming Back! Celebrate Season 3 by Recreating a Scene-Stealing Hot Fudge Sundae

3rd seasonBear may be back soon, but one ice cream from the second season is still on our minds.

Aya Edebiri’s character, Sydney, visits classic Chi-Town restaurants in a drool-worthy montage, while Carmy (Jeremy Allen White) is busy putting out fires at his restaurant. One of the stops in Sydney is Margie’s Candies, a century-old pastry and confectionery shop, where you can try the classic ice cream purchase and learn about the local gastronomic scene.

Peter George Poulos opened the old school candy store in 1921. More than 10 years later, the store was renamed in 1933 after Peter’s son George’s wife, Margie Michaels. Today, the fourth generation is still handing out hand-dipped chocolates and over-the-top ice cream creations.

Hot Fudge Sundae.

Classic hot ice cream sundae

1 cup heavy cream

⅓ cup granulated sugar

¼ cup lightly packed light brown sugar

2 tablespoons of unsalted butter

⅛ teaspoon fine sea salt

1 oz. bittersweet chocolate, roughly chopped

⅔ cup sifted Dutch process cocoa blend (2½ oz.)

¼ teaspoon vanilla extract

Ice cream, for serving

Whipped cream, chopped walnuts, sprinkles and maraschino cherries, for topping

1. Combine cream, granulated sugar, brown sugar, butter, and salt in a medium saucepan over medium-low heat. Bring to a gentle boil, stirring often, until the sugar dissolves, about 4 minutes. Add chopped chocolate; stir until dissolved, about 30 seconds. Remove from heat. Add cocoa; beat until no lumps remain.

2. Return the pot to the stove over low heat; sauté, stirring constantly, until glossy, 15 to 20 seconds. (Do not allow to boil.) (Note: If sauce is too thick to pour, add 1 to 2 tablespoons cream until desired thickness is reached.) Remove from heat; stir in the vanilla. Pour hot fudge sauce over ice cream; add toppings and serve.
