Kelsey Barnard Clark likes to play with heat levels in her recipe for tailgate-friendly wings.
“Piri-piri chilies are about 10 times hotter than jalapeños, making them the perfect pepper for a spicy wing,” says the book’s author Southern gatherings cookbook about her “sweet and sticky” wings. “This dish can be ‘mouthwatering’ – hot or have just a subtle flavor, so be sure to use it in moderation.”

“Wings are the perfect party food. They have their own handle and are the ideal conduit for any sauce, condiment or seasoning—and, most importantly, they’re freaking delicious, all of them,” adds Clark.

Honey Kelsey Barnard Clark and Piri-Piri Chicken Wings
½ cup ghee or garlic ghee, melted
6 cloves of garlic, thinly sliced
1 teaspoon of garlic powder
1 teaspoon of smoked paprika
1 teaspoon dried oregano
A pinch of ground red pepper
¼ cup, plus 1 tsp. honey, divided
2 teaspoons kosher salt, divided
3 lbs. chicken wings, cut at the joints, discard the tips of the wings, rinse and pat dry
2 lemons, divided
¼ cup piri-piri sauce
1 teaspoon of freshly ground black pepper
Cooking spray
1 lime, cut into wedges
Fresh cilantro or basil, for garnish
1. Combine ghee, sliced garlic, garlic powder, smoked paprika, oregano, ground red pepper, 1 teaspoon honey, and 1 teaspoon salt in a medium bowl. Add the chicken; to throw on the coat. Cover and refrigerate for at least 1 hour or up to 3 days.
2. Preheat oven to 450°. Line a rimmed baking sheet with aluminum foil and place a wire rack inside. Spray rack with cooking spray; arrange the chicken in a single layer on the rack.
3. Bake in the oven for 25 minutes, or until lightly browned. Turn the chicken over and bake until well browned, about 25 minutes.
4. Meanwhile, squeeze ½ cup lemon juice into a small sauce pan; stir in the piri-piri sauce, black pepper and the remaining ¼ cup of honey and 1 teaspoon of salt. Bring to a boil over medium-high heat; cook until reduced by half, about 6 minutes.
5. Remove from the oven. Coat the wings with the piri-piri sauce mixture. Bake for 5 minutes. Turn the chicken over and glaze again; cook until glaze is set and internal temperature reaches 165°, about 5 minutes longer.
6. Cool for 10 minutes. Squeeze lime wedges over top; sprinkle with cilantro or basil.
