Magdalena Roze, a former Sydney resident now living in the small town of Byron Bay, is grateful to be surviving the pandemic in a region of New South Wales that has so far escaped the harshest effects of the virus.
At the end of the day, they have required the peace and quiet of the well-known coastal retreat. Since one of the Australian industries most impacted by COVID is hospitality, Roze and her chef fiancé Darren Robertson have been in the midst of it, managing eight restaurants spread across three states.
If you haven’t been following their expanding restaurant empire, Robertson co-owns Rocker in Bondi Beach, Oma in Byron Bay, and six Three Blue Ducks in NSW, QLD, and Victoria.
Seven of the eight businesses were under lockdown last week, but now that Byron has been released from his five-week stay-at-home order, another two can reopen. 18 months into a pandemic, they’ve learned to roll with the punches, Roze tells Mamamia.
Because it seemed to come out of nowhere and there was so much ambiguity, “it” affected us hard when it first happened. The uncertainty is what makes it frightening since it took a few weeks for the government funding to arrive, and prior to that we were concerned about how we would be able to continue paying our employees and our rent.
Every night after putting the kids to bed, we would spend hours on the couch talking and planning how to pivot. “Those days felt like a year.”
According to Roze, they had to accept that they might lose everything, even ten years’ worth of labour. She said to Mamamia, “That was pretty confronting. “In the end, we had to sort of say, ‘Okay, that’s possible; if it happens, so be it; we’ll just have to start over. Our families and physical well-being come first.
The 39-year-old claims that they went through a grieving process that ultimately proved to be really liberating.
“Because it’s almost a relief once you accept losing it all. And it has simply made the rest easier for us to handle. Nothing has mentally tested us as much as those first few weeks, so we just sort of concentrate on that.
Since their children were born, Robertson has put his career first while Roze stays at home to raise their two sons, Archie, 5, and Charlie, 3. One of us has to be the anchor, says the TV host, meteorologist, cookbook author, and businessman. Family is the most important thing to us, so if we’re both moving at full speed, something has to give.
