The attack took place at a Morrison’s supermarket on the St Helier coast in Jersey
Police investigating the horrific attack said the 55-year-old man “was known” to his victim.
Armed police swarmed the area, which was packed with people doing early Christmas shopping.
As shocked staff rushed to help the seriously injured woman, a man was seen running from the store.
Police later said the man had been arrested on suspicion of attempted murder and was in custody.
Sources at the scene said the woman was an employee at the store, but it was not known if she worked at the check-out or in another “front of the house” position.
It is also unclear whether her attacker worked at Morrisons or entered the store as a customer.
Police cordoned off the area and set up crime tents in front of the store, which was evacuated.
Jersey Police said there was no threat to the general public.
The woman was treated by paramedics at the scene before being rushed to hospital in a “serious” condition.
Morrisons, as well as the walkway between the store and Cooper’s cafe, were sealed off.
In a statement last night, police said: “Officers were called to reports of a stabbing at 1.30pm this afternoon at Morrisons, Castle Quay, St Helier.
“The man repeatedly stabbed a 34-year-old girl who walked away from the scene.
“She was transferred by ambulance to the Emergency Department, where she is in serious condition.
“A 55-year-old man, who is known to the woman, has meanwhile been arrested on suspicion of having committed the crime of attempted murder and is currently in police custody.
“Police would like to speak to anyone who may have seen this or has any information.
“They can call the police on 612612 or the independent charity Crimestoppers anonymously on 0800 555 111 or via their anonymous online form at Crimestoppers-uk.org”
Since the incident, forensic experts have been seen entering the store, which has been closed until further notice.
Morrisons have been approached for comment.
