Jozef Youssef Wikipedia, Nationality, Chef, Kitchen Theory, Restaurant – A chef and a researcher from Imperial College have collaborated to produce a cookbook with meals employing “hyperfoods,” or foods that contain anti-cancer chemicals.

The free recipes are based on research from the DRUGS project, which employs artificial intelligence (AI) and machine learning to detect anti-cancer compounds in common foods. The project is directed by Dr. Kirill Veselkov from Imperial’s Department of Surgery and Cancer. Ingredients like carrots, celery, oranges, grapes, coriander, cabbage, turmeric, and dill contain these compounds.

In a new book titled Hyperfoods, Dr. Veselkov collaborated with chef Jozef Youssef to develop meals using some of these items. In addition to raising awareness of how food may improve people’s wellbeing and lower chronic diseases, they wanted to show how simple it is for individuals to adopt hyperfoods into their diets. On the Kitchen Theory website, Hyperfoods can be downloaded without charge.

The guidebook contains recipes for roast carrot and chicken skewers with satay sauce, sauerkraut buckwheat pasta bake, and hot chocolate with turmeric spice. The number of anti-cancer compounds and which ingredients are hyperfoods are broken down for each recipe.

In a previous study, Dr. Veselkov’s team examined data on the molecular composition of more than 8000 common foods and discovered more than 110 compounds that fight cancer. Many of these molecules belong to the enormous class of substances known as flavonoids, which contributes to the colour of fruits and vegetables. In order to quickly crunch data and further scientific research, the initiative made use of DreamLab, an award-winning programme created by the Vodafone Foundation that harnesses the processing power of tens of thousands of smartphones that are charging overnight.

According to Dr. Veselkov, chronic illnesses like cancer, neurological problems, and heart ailments are on the rise. It is believed that approximately half of all malignancies might be averted by making appropriate dietary and lifestyle choices, and studies reveal that improper diets are to blame for a fifth of deaths worldwide. The public’s ability to participate and make a difference has been made possible by the fact that our research was driven by the Vodafone Foundation’s DreamLab app, which has been great.

While we are still a ways off from providing prescription or customised diets, Kitchen Theory Chef Jozef Youssef said: “This seminal research – and accompanying recipes – represent an essential step in understanding how we might choose food more wisely to improve our health. The recipes in this book were developed to demonstrate to readers how to employ the disease-fighting components that were emphasised in the research to make wholesome and delectable foods and beverages. I hope people will be motivated to construct their own!”
