Yossy Arefi is serving pumpkin flavor at his Thanksgiving dinner, but not with pie.

Snacking Pastries cook. “Pumpkin, spice and chocolate are a delicious trio, and these bars combine the three in a package that’s easy to make and love.”
The food blogger suggests keeping the candy selection simple for Turkey Day. “Thanksgiving can be a big boost for home cooks, so a light dessert is always a great idea,” says Arefi.

Bars with pumpkin and chocolate chips by Yossy Arefi
1 cup packed light brown sugar
½ cup (4 oz.) unsalted butter, melted
⅓ cup canned unsweetened pumpkin
1 tablespoon of neutral oil
1 teaspoon of vanilla extract
2 teaspoons ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cardamom
½ teaspoon fine sea salt
¼ teaspoon ground allspice
½ teaspoon of baking soda
1½ cups (about 6⅜ oz.) all-purpose flour
1 cup semisweet chocolate chips, divided
1. Preheat oven to 350º with rack in center position. Coat an 8-inch square baking dish with cooking spray or grease with butter. Line a pan with parchment paper, leaving a 2-inch overhang. Set aside.
2. Whisk together the brown sugar and melted butter in a large bowl until well combined. Add pumpkin, oil, vanilla, cinnamon, ginger, cardamom, salt, and allspice; mix until smooth and shiny. Stir in baking soda. Slowly add the flour and ¾ cup chocolate chips until just combined.
3. Transfer the dough to the prepared pan and spread it into an even layer. Sprinkle the remaining ¼ cup of chocolate chips on top and gently press them into the surface.
4. Bake until golden brown, but still wobbly in the middle, about 30 minutes.
5. Cool in the pan for 20 minutes, then use the baking parchment to lift the bars out of the pan. Slice and serve.
