According to Suresh Pillai, he started selling Kambili Naranga (pomelo) fruit at the local market to earn pocket money when he was in sixth grade. As a teenager, he started selling roasted and whole peanuts. During his teenage years, he worked as a hotel waiter, temple restaurant cleaner and catering boy.
After completing his pre-university program, Suresh Pillai decided to work part-time as a chef while pursuing his pre-university degree. In 1993, at the age of 17, he started working as a waiter at the Chef King restaurant in Quillon. He worked there for three years before moving to Calicut to learn Malabar cooking and working there for four years.
In 1998, Chef Pillai moved to Bangalore and started working as a chef at Coconut Groove Hotel, specializing in South Indian cuisine such as Coorgi, Chettinad and Konkani, where he worked for six years. He later joined the Leela Restaurant Group as a management trainee and subsequently worked as a sous chef at Kumarakom.
In 2005, Suresh Pillai moved to London and worked as a chef at Veeraswamy restaurant. He then worked as sous chef at Purple Poppadom in Cardiff before becoming head chef at Cinnamon Culture in London. Later, he worked as assistant chef at Gymkhana, head chef at Darbaar Restaurant and then as head chef at Hoppers.
In 2020, he moved to India to become the Corporate Chef and Culinary Director of “The Raviz Hotel” in Kollam. During this time, he traveled to different countries and collaborated with different chefs on special gastronomic events. He subsequently opened his own restaurants in Germany and Portugal.
