Top Chef: Buddha Lo Talks Kristen Kish, the Mistakes on Episode 1 and Which Chefs He’s ‘Looking Out for’

Buddha Lo is twofold A top chef winner, executive chef at Hūso in New York and brand ambassador for Saratoga Spring Water. He shares his thoughts after each episode of Top Chef Season 21, which takes place in Wisconsin, offering a unique perspective as a former chef.

I missed it A top chef since I put in my last dish, and that didn’t change after watching the first episode. At the end of the day, it was better that we broke up because they would never have gotten me out of there. And now I have twins — so I want to be the best dad, not the best cook.

There is a new crop of talent fighting for the title anyway. Every season from A top chef is amazing, but in Wisconsin it will be really exciting to see where the challenges go as they dive into the local cuisine and culture.

After watching (and competing in) so many episodes with Padma [Lakshmi]The first time I heard Kristen Kish, the voice gave me goosebumps. Everyone knew she had huge shoes to fill, but she did an amazing job.

What impressed me the most was the amount of talent I saw. Many chefs have been nominated for James Beard, and even more have worked in Michelin-starred kitchens. They have a real eclectic lineup. Also lots of fun personalities.

CHALLENGE

There was no QuickFire in this episode — and to be honest, I wasn’t good with non-QuickFire for the first challenge. The first one is really fun. I’ve always found it a good opportunity to take advantage of a situation that won’t happen later in the game, where no one knows anyone’s cooking skills.

Instead, there was an instant elimination challenge with the chefs divided into three groups: soup, stuffed pasta and roasted chicken. But the loser didn’t go home right away. It was a curve. They made them cook once more, which later happened to the bottom three.

Being a former competitor, I recognized a few mistakes. Like when Kenny [Nguyen] he mentioned that he forgot to put his dark meat chicken in the dish. The camera zoomed right in on the chicken, so I don’t think he forgot it, he just didn’t want to put it in because it was raw. Look, I was already there, so I didn’t miss it.

I’m looking for a couple of cooks. There is an Indian chef, Rasika [Venkatesa] — Padma would love that. I believe she highlights Tamil cuisine, which is very interesting. I didn’t think she did the challenge right, but I thought she made a pretty nice dish. If this is what’s next, I can’t wait to see what the future holds.

WHO WON

many [Barella] won for his green pozole in the soup category. Kudos to him. Sometimes in the first challenge the chefs think too much about what needs to be done. It did exactly what it needed to do and did it well.

The judges are looking for basic cooking. You can add all those bells and whistles, but if you don’t do what you’re told, you’re not doing yourself any favors.

WHO HE LOST

David [Murphy], who had to pack his knives, was his own worst enemy. David was in the bottom three for stuffed pasta, but everything he put in it was wrong. The proportions were wrong. He said pasta wasn’t his thing. Tom said that on the show, which is one of the things you always hear Tom say, “Not everything is going to be to your taste,” which is true. That’s what A top chef is around.

It’s actually a very long process to get invited to the show. And during that time, people should be honing their skills and doing things they haven’t done before or haven’t done in a while, because you know you’re going to be asked to do it.

Everyone on the show is a great cook, but you don’t want to be sent home for one of the simple things. I would really like to see him cook more because he had a great personality.
